a cake for the weekend :: blackberry brownies

These are times when an idea for a cake pops into my head and won’t go away until I’ve baked it. Blackberry brownies was one of these ideas. I saw a picture of some amazing-looking raspberry brownies that Lottie was baking. Meanwhile, my freezer was filling up with bag after bag of blackberries.  I did a bit of searching online and discovered a black forest brownie recipe over at The Pink Whisk, which used frozen berries. My only alterations were substituting blackberries for the black forest fruits and using 70% cocoa chocolate in place of the Bournville.

Essentially, this is a fairly standard brownie recipe with the frozen berries scattered over the top just before baking. It is, however, rather greater than the sum of its parts and the brownies were just as delicious in real life as they had been in my imaginings. The berries add a depth of flavour and slight tartness, which complements the chocolate perfectly and their added moisture made the brownies extra squidgy and fudgy. Which can only be a good thing. Just perfect to have with a cup of tea It’s good to have another blackberry recipe to add to my repertoire, but the freezer is still stuffed full of them, so I am always on the look out for alternative suggestions…
